These beans are supple and fragrant, with about a 20% moisture content. Each package contains 24–26 pods.
Best used for making extract, 4 oz. of pods will make 40 oz. (1 quart plus 1 cup) extract. Or, you can scrape out the caviar (you’ll get a lot, even though these are grade B beans) and extract the husks, usually at about half strength, so you’d get 20 oz. of extract.
The scraped husks can also be dried and ground into a powder and used in recipes.
These pods are from our 2019 harvest out of the vanillery. They were hand-cured using our unique modified Bourbon curing process adapted to wet, cool Kauai winter weather. After curing, they were aged for a minimum of 3 months.
